General
The Product
TESTO is a signature food project by Editoria Gastronomica. TESTO is its signature product: an artisanal bread made from a blend of five flours (soft wheat, spelt, oats, rye and barley), enriched with flax and sesame seeds, and leavened with sourdough starter and biga for 18 hours. It is neither a focaccia nor a traditional sandwich, but an original proprietary format featuring a crunchy crust and a soft center, designed to hold premium fillings made with carefully selected ingredients from artisanal producers.
TESTO uses 5 noble flours: soft wheat (structure and softness), spelt (rustic taste and nutritional value), oats (lightness), rye (aromatic depth), barley (fiber and flavor). The dough, enriched with flax and sesame seeds, was developed exclusively with the Scuola Italiana Pizzaioli.
TESTO uses sourdough. Sourdough guarantees a richer aromatic profile and better digestibility compared to conventional brewer's yeast.
TESTO bread requires 18 hours of maturation of the biga with sourdough.
The long maturation of the biga allows enzymes to pre-digest the flour starches. The result is a product that does not weigh you down, ideal for those who need to walk after eating it. This is one of the technical aspects that TESTO worked on the most during the development phase.
Slow leavening is a process in which the dough matures for many hours at a controlled temperature before baking.
During the 18 hours of biga maturation, the enzymes present in the sourdough and flour partially break down starches and gluten. This process reduces the glycemic load of the bread and makes it more tolerable even for those with non-celiac gluten sensitivity. It is not gluten-free, but it is significantly lighter.
Industrial bread uses brewer's yeast with fast leavening (1-2 hours), standardized flours, and additives for preservation. Artisanal bread, like that of TESTO, has a completely different production process and no additives. The result is a lighter and tastier bread with a naturally shorter shelf-life because it is free of preservatives.
A blend of different flours allows combining the characteristics of each: soft wheat gives structure and softness, spelt gives depth of flavor, oats give lightness, rye gives aroma and color, and barley gives fiber and digestibility. TESTO's dough was developed to achieve a unique balance: a bread strong enough to hold important fillings, yet light enough not to weigh you down.

TESTO's dough was developed exclusively in collaboration with the Scuola Italiana Pizzaioli, the leading Italian technical institute for training in artisanal baking and pizza making.
The Menu
Yes. TESTO offers two vegetarian options: Terra Madre with oil-whipped potatoes, eggplant, zucchini, and semi-dry tomatoes, and L'Orto with buffalo mozzarella, zucchini, eggplant, confit tomato, and eggplant cream. Both follow the same philosophy of artisanal ingredient selection.
Yes. Il Doge with Venetian-style creamed cod, sardines, and seaweed powder, and Lo Spada with swordfish, vegetable caponata, and pistachio pesto.
Yes. TESTO bread is particularly digestible. For children, the most recommended Capitoli are the simplest ones, such as Il Sincero with cooked ham and mozzarella or Terra Madre with vegetables. Always check allergens before ordering.
Allergens and Diets
Currently, TESTO's menu does not include gluten-free options. The base dough contains soft wheat, spelt, oats, rye, and barley, which are all gluten-containing cereals. All products contain the gluten allergen, so TESTO is not suitable for celiacs. It is recommended to inform the staff about any allergies or intolerances before ordering.
Yes, Terra Madre is our vegan option.

TESTO is not a sandwich shop. We do not make sandwiches, but travel diaries. Each product is a Capitolo of an Italian gastronomic tale, where the dough is the page and the ingredients are the words. It combines the Anima Slow philosophy (artisanal sourcing, slow leavening, and selected producers) with a format designed for urban consumption on the go, without tables.
Editoria Gastronomica is the founding concept of TESTO. The brand treats food as narrative content: bread is the blank page, ingredients are the words, and each recipe is a chapter.

TESTO's packaging is designed like a book cover. It opens by pulling the red tab labeled pull to open. On the side, there is a QR Code that links to a selection of recommended nearby places to stop and enjoy your Capitolo. The pack is a design object conceived to be part of the experience.
TESTO selects its ingredients directly from producers, often personally visited. The team traveled Italian roads to find artisanal suppliers, often without a digital presence, who do things the way they should be done. Each ingredient has a story and an traceable origin.
Testo is led by chef alberto, who oversees creative direction and recipe development, and gaetano, a master butcher in charge of selecting, dry-aging, and preparing all meats.

Urban slow food is an approach to dining that brings the values of slow food (traceability, craftsmanship, respect for natural production times) into a format suitable for city life: fast in consumption, economically accessible, available without a reservation.
The fundamental difference lies in the way time and food quality are considered. While fast food standardizes production processes for the sake of speed, TESTO's signature street food offers a practical, "pop" format that is quick to consume, but with a care and research that are the exact opposite of industrial production. We follow the slow-made philosophy, where natural rhythms matter much more than mass efficiency: that's why our dough leavens for so many hours and long cookings, like that of the stracotto, require hours of preparation. To this, we combine a clear stance: we reject large distributors to personally select small Italian artisanal producers. In this way, we bring excellent ingredients, local specialties, and quality raw materials that are usually found only in high-profile restaurants to the street, ensuring that every bite has a clear origin and is truly a story to tell.
